Tea has long been enjoyed as a fragrant and refreshing drink - hot or cold. But it's just as handy in the kitchen, plus it's a valuable source of vitamins and antioxidants. Use it to marinate and tenderise meat or to give casseroles and sauces an interesting flavour: simply replace some of the stock with tea. The same goes for rice or couscous cooked in tea instead of water. Otherwise, make a fragrant tea syrup to drizzle over fruit salads and dessert
